Ling Cod are the definition of succulence. They are a very deep water dweller. This extreme cold water makes it necessary for the fish to pack on "fat" to regulate body temperature. Halibut has the same trait as a species. The Ling Cod will offer one of the highest moisture contents in the Cod market. This is a seasonal fishery and is typically caught by Halibut Boats in Alaska. Give the Ling Cod a place on your "Feature Board" and your guests will rave. This is free marketing that we could all benefit. Poach, Broil, Saute, Fry.
Robust, Firm, Meaty
Conger is distinguished from Eel by its long dorsal fin that begins at the end of the pectoral fins. The skin is scaleless and covered with a thick mucous. Its head is slightly flattened and its mouth filled with small, pointed and very sharp teeth. The Conger is a completely nocturnal fish that lives in shallow waters.
White, Mild, Flakey
Winter Flounder are a "Right-Eyed" Flounder and are cousin to the Plaice. "Left-Eyed" Flounder include Fluke (Summer Flounder), Southern Flounder, and Gulf Flounder. It is reasonable to state that the Winter Flounder inhabit colder waters and in turn have a higher content of body fat, producing more moisture in the flesh.
