Red Abalone are 3-4 inches in width and contain about 6 pieces per pound in shell. The meat can be relaxed by cleaning the Abalone down to the "Foot". Place the meat onto a cutting board and gently pound until the meat is tender. For Sashimi, slice across the grain for the perfect bite. This is a "Fine Dining" Phenom. Rich, Buttery
Kampachi are a dusky color with light amber/olive stripes down their sides. Their upper bodies and lower fins tend to be a dark blue-green to brown, with a much lighter underbelly that can appear almost lavender. Average size is around 6lb. Whole fish are perfect for roasting, poaching or steaming. Fillets are excellent raw (sashimi, crudo, ceviche) or a good choice for grilling, pan searing or steaming.

Mid Atlantic Fluke is a “Left- Eyed” Flatfish. They inhabit chilly waters. This results in a moist fish from body “fat”, that regulates their temperature, and protects the fish from cold environments. Mid-Atlantic Fluke are the step above Flounders in this regard and are comparable to tiny Halibut.
