Current Irish lobster fishery regulations include: a) A minimum size for the lobsters landed which is a carapace length of 87 mm. b) Ban on the landing of lobsters that have been “V” notched or have a mutilated tail fan. c) Prohibition of capture of lobsters by SCUBA diving, and d) Licensing of all commercial fishing vessels. A Restaurant Ready Whitewater Mussel trade or Big One Mussel is a bottom cultured product fished from the cool waters of New England. Post-harvest, the mussels are shipped to our facility located on Narragansett Bay, Rhode Island where the Restaurant Ready process begins.

Vermillion is hugely admired by coastal Chefs. The Vermillion Snapper have the incredible qualities of True American Reds, with a smaller size and price tag. The diet of the Vermillion Snapper deviates from its larger cousin. The diet consists primarily of bottom dwelling invertabrates which lends to a very sweet finish. The culinary applications of this species is as broad as the species' dispersion along the Eastern Seaboard. Sizes range from 1 - 4 lbs and the fillets from medium fish are perfect portion ready. The smaller fish allow for a phenomenal "Whole Fish" presentation. The petite bone structure is perfect for the diner and easily filleted tableside by the server. Get excited. The Flame Snapper inhabit the rocky deep off the coast of Australia. They are known to live up to 1300 feet below the surface. The cold depths of their range produce a clean and moist protein that rivals any Snapper in their sweet and rich profile. Typically a larger Snapper, the Flame Snapper produces a very versatile fillet. The thickness allows perfect portioning and a remarkable plate presentation. The Flame Snapper also provides a beautiful deep pink to red skin that crisps wonderfully. The skeleton offers a clean yet rich ingredient for stocks, consommes, and fumets.
