Gold Spotted Sand Bass have a Light, Clean Flavor with a medium flake. The fish are hand line caught about 200-500 ft. deep. Great portion yields on 1-3 lb. fish. Skin is light flavored and crisps nicely. A wonderful alternative to more expensive Snappers and Sea Bass. Sauté, Pan Roast, Poach.

Opah consists of two cuts that separate the body structure. The Back, which is the most valued, and the Belly, which has a versatile usability. The back loin will resemble a slighty curved Cylinder and the Belly has a flat triangle shape. Opah can be treated as Tuna, Swordfish, and Ono. The flesh is firm, but holds moderate moisture.
