Mild Yet Sweet Flavor
With flesh that tastes like crystal clear saltwater, Bali Barramundi Sea Bass is highly versatile. Aside from having a deliciously mild yet sweet flavor when raw, it can be Grilled, Baked, Steamed, Sauted, even BBQ'd. Its rich flavor can be enhanced with ingredients both Eastern and Western. The skin has a layer of fat that when salted and seared crisps like pork crackling.
Nutty, Earthy, Lean, Moderate
Plank Cut Lean Firm Fish. Some say it has the flavor of Walnuts and Poultry. Great yields (near 100%) on the loin. Pink to orange hues give it a beautiful Sashimi display quality. Hebi is a unique flavor that sets it apart from all others.
Clean, Firm, Moderate
From receiving, it lends itself to a great butchering aspect. From whole fish, to wagon wheels, to steak ready loins, this cylindrical body has a great yield. Cutting waste, cutting butcher time, cutting cost. With the firm texture of the flesh, and abundant flavor, Shutome is phenomenal for grilling, light smoking, and broiling. It also caramelizes nicely in a searing application. It holds up fearlessly against powerful “sets” and spices.
