In the Haemulon Genus we find many Florida favorites including Magrate, White Snapper, Sailor's Choice, and Porkfish. The Margate is one of the largest in the Genus. Margates are a specialty and aren't often targeted by fishermen. Its Snapper like qualities make the Margate a very desirable food fish. Eats like a cross between Red Snapper and Hogfish. Light, moist, white and sweet. Apply any of your favorite Snapper or Hogfish recipes for a brilliant guest experience.
Moist, Succulent, Moderate
Greater and Lesser Amberjacks have a great "Oil" to the flesh. They cook up firm with a very silky texture. Wild Amberjacks are leaner than farmed Hamachi and Hiramasa, but hold up to more expensive farmed products in flavor and usability. Amberjacks are an undersung species and have a reputation for parasitic activity in the flesh. If parasites are found they are easily removed and also pose no threat to humans. This is a reputation that is not as deal breaker. Amberjack receive high heat cooking very well and marinate beautifully. Sear, Broil, Grill, Smoke.
Rich, Succulent, Buttery, Mild
If you are looking for a rich and buttery substitute for your Salmon program, Skye Trout is a phenominal resource. With sustainability at the forefront of their operation, you can rest assured that the quality is that of wild species, but with a more direct logistic avenue. Ocean Trout behave just like fatty Salmon on the plate and in the pan. However the subtle mild flavor is a blank canvas for culinary creation.
