Opah is prized for its complex Ocean flavors. It is firm, yet moist, in many cooking applications. Processing Whole Fish in California, we have availability to some very specific cuts. Primarily the Back & Belly, or Rack is saught, but through a talented butchering aspect, we have secured the Cheeks as well. The "Tenderloin" and "Tri-Tip" are two very unique Cheek Cuts that is sure to make your guests very happy.
Light, Moist, Flakey
Gold Spotted Sand Bass have a Light, Clean Flavor with a medium flake. The fish are hand line caught about 200-500 ft. deep. Great portion yields on 1-3 lb. fish. Skin is light flavored and crisps nicely. A wonderful alternative to more expensive Snappers and Sea Bass. Sauté, Pan Roast, Poach.
Lean, Succulent, Clean
Mangrove Snapper love shallow tidal currents. Typically found near stands of Mangrove Trees in areas where tidal waters flow in and out. Strong swimming and voracious eating result in complex and moderate flavors. Ceviche, Steam, Saute, Pan Roast.
