Claw meat is obviously taken from claws but also includes leg meat. It is the cheapest because the meat is small and has the least integrity. Special crabmeat is meat taken from front of the body. Again, a little bigger, more integrity. Jumbo Lump crab meat is from the back of the body. It has the most integrity and is the largest meat on the crab due to propelling those powerful swimming fins. Finally, Backfin meat is essentially broken pieces of Jumbo Lump crab.
Silky, Firm, Flakey, Complex
White Trevally has a very rich texture and is a very flavorful species. It has the oil content of the fattiest of Yellowtail and a very clean, pronounced "Ocean" flavor. This fish works in a variety of applications and is hearty enough to fit bold "set" flavors.
Light, Clean, Tender, Silky
The Alfonsino is a distant Cousin to the Sumatra Fighting Fish, a salt water Beta. They are more closely related to Hawaiian Ehu. The Fish are 5-7 lbs at their largest. Alfonsino have been described as "Melt in Your Mouth".
